SERVING SINCE 2011
Our coffee journey started with slowly absorbing the coffee culture as a barista in Sydney, Australia. In 2010, we opened our very first café in a (very) small space underneath a guesthouse within downtown Chiang Mai. Since the very beginning, our goal has been to translate our own experiences of coffee into something the coffee lovers in this beautiful town can relate to.
One year onwards, we began roasting small batches of coffee to cater to our customers. Apart from roasting, we also started to educate ourselves about thai coffee beans by reaching right to the source and working with local farmers from several areas in Thailand.
As time passed and the demand for the coffee we roast outgrew our store’s capacity. More customers were interested in distributing our beans in their shops. That was when we decided to move our location into a more roasting-oriented facility, ultimately changing our name to “Ponganes Coffee Roasters”. Today, we are still a small local roaster, constantly striving for knowledge and improvement. More importantly, we are conscious of our role as a middleman between the start to the end of the stream, from the farmers to the coffee drinkers. Our goal is simply to make the best coffee we believe we could make for as long as we’ll be able to, just like the very first day of our journey.
จากจุดเริ่มต้นในการทำงานชงกาแฟและซึมซับ coffee culture ที่ซิดนีย์ ออสเตรเลีย
ในปี 2011 เราเริ่มต้นร้านกาแฟเล็กๆใต้ถุนเกสเฮาส์ ชื่อ “ Ponganes Espresso” ในย่านนักท่องเที่ยวในเขตคูเมือง เชียงใหม่
เรานำประสบการณ์และรสชาติกาแฟที่เราชื่นชอบ มาแชร์กับผู้ที่รักการดื่มกาแฟในเมืองที่มีเสน่ห์แห่งนี้
หนึ่งปีจากจุดเริ่มต้น เราเริ่มทดลองคั่วกาแฟเองเพื่อใช้เสิร์ฟลูกค้า นอกจากการคั่ว เราเริ่มเรียนรู้กาแฟไทยจากต้นน้ำจากการทำงานร่วมกับเกษตรกรผู้ปลูกกาแฟจากแหล่งปลูก
จากหลายพื้นที่ เมื่อเวลาผ่านไป มีลูกค้าที่ชื่นชอบสไตล์การคั่วกาแฟของเราและสนใจนำไปเสิร์ฟให้ลูกค้าเพิ่มขึ้น
จึงย้ายสถานที่และพัฒนาการป็นโรงคั่วที่จริงจังมากขึ้น และเปลี่ยนชื่อเป็น “Ponganes Coffee Roasters”
เรายังคงเป็นโรงคั่วท้องถิ่นเล็กๆ ยังเรียนรู้ พัฒนาตัวเอง อยู่เสมอ และตระหนักถึงการเป็นตัวกลางระหว่างต้นน้ำคือผู้ปลูกกาแฟและปลายน้ำคือนักดื่มกาแฟ
โดยมีเป้าหมายที่เรียบง่ายคือ ทำกาแฟออกมาให้ดีที่สุดอย่างที่เราเชื่อและทำมันอย่างสม่ำเสมอเหมือนเช่นวันแรกที่เราเริ่มต้น
